There are many fantastic recipes included in Grains as Mains, including:
I really like the section on the far right of the page called “Grain Exchange”. It gives you options for alternate grains and other ingredients you can substitute in the recipe.
With more than 200 pages of recipes to choose from there are so many options!
Here are the recipes I want to try from Grains as Mains first – well after the Almond Polenta Cake with Raspberries pictured above!:
Breakfast and Brunch: Cranberry, Orange and Chocolate Quinoa Bars (p 40)
Nutritious Soups : Sweet Potato and Peanut Soup with Teff (p 69)
Warm and Cool Salads: Rainbow Wheat Berry and Feta Cheese Salad (p 86)
Savory Stir-Fries: Thai Peanut and Wheat Berry Stir-Fry (p 114)
Nourishing Risottos and Pilafs: Sweet Potato, Cranberry, and Pecan Farro (p. 146)
