Grains as Mains features 14 different grains:

  • amaranth
  • barley
  • buckwheat
  • bulgur wheat
  • farro
  • freekeh
  • kamut
  • millet
  • polenta
  • quinoa

Grains as Mains is 255 pages in length and is beautifully illustrated.

The contents of the book are broken down into the following categories:

  • The Grain Store
  • Grain Power
  • Be Prepared
  • Cooking the Perfect Grain
  • Grain Teasers

Then we have the Recipes (so many recipes!):

It explains which grains are gluten-free and which are not, how to store your grains, how to cook your grains, the nutritional value in your grains (calories, vitamins, protein, fiber, etc.) and how to prepare them properly.

I really like the section on the far right of the page called “Grain Exchange”. It gives you options for alternate grains and other ingredients you can substitute in the recipe.
